The best way to grill a steak

No matter how you go about it, grilling a perfect steak that is swoon-worthy is no simple feat. Cook it too long and you have a dry overcooked steak that no mortal being would dare consume. Unless you’re a vampire or other creature of the night, rare steaks are generally frowned upon as well. It may take a few tries but I think the best way to learn is by jumping right in.

Doneness is a preference

The best way to grill a steak is subjective. Most folks prefer medium, medium well or well done. This article provides tips on the best way to grill a steak medium well. A medium well steak is one that has a nice outer crust and just a hint of pink in the middle. The internal temperature should reach 150-155°.

It’s all about taste

It’s alarming how many times I’ve been to a well-known steak house and walked away disappointed. Sure my steak was cooked correctly. There wasn’t a hair in my food and the waitress provided excellent service. The problem was that my steak lacked flavor. What’s the point of getting all dressed up, going out to a restaurant only to pay an exorbitant price for an inferior product. Sure the buttered rolls and mashed potatoes are to die for but it doesn’t satisfy the carnivore inside me.

Marinade or dry rub

Steak is pretty bland just by itself. I personally prefer the use of a tasty marinade in my meat. In fact, I feel like I’ve achieved perfection with my personal marinade but we will save that for another time. A quality marinade injects and supercharges your steak with much needed added flavor and moisture. The downside is that it can be time consuming and can be very messy to clean up. Dry rubs still provide a wealth of great flavor but will not take much time to prepare and apply but the best way to grill steak is with the use of a quality marinade.

Getting crusty

Steak is best served with a gorgeous crust. The mark of a great tasting steak lies in a golden crust. I also love the look of some clean char or grill marks but let’s not get ahead of ourselves. Let’s start with preparation.

Preparing the steak

In my example, I used top sirloin steak. I love the taste of sirloin you could use any cut you wish. Just make sure to trim off any unwanted fat. Start by poking holes with a fork or knife on both sides. Fill some of these holes with minced garlic. Next I brush or apply Worcestershire sauce to both sides and then coat with a simple Grill Mates® Montreal Steak Seasoning purchased at your local supermarket and then salt and pepper. Place the coated steak on a cover plate or container in the refrigerator. I like to use freezer bags for this. My preference is to let this set overnight but if you’re in a hurry, do this an hour ahead of time. The more time you allow for marinating, the better your chance for a tender, juicy steak with a stellar flavor.

Heat is the best way to grill a steak medium well

Are you sabotaging your steaks by overcooking them? The best way to grill a steak is by locking in the juices to ensure tenderness.  The best way to accomplish that is through the use of high heat. As a side benefit, it’s also how you obtain those beautiful grill marks. If you are using a gas or electric grill this is fairly straight forward. A charcoal grill can be a bit more challenging. Either way, crank the heat for about 10 minutes before cooking.

Searing the steak

If you have a grill that has multiple burners, set one side to high heat and one side to medium. Using tongs, place the steak on the grill for 2-3 minutes but do not move them. Moving the meat around will prevent you from getting those lovely grill marks. Be sure to flip the steak for another 2-3 minutes without disturbing them. Wrap the steaks in aluminum foil. and place them back on the grill at medium heat.  You do not want to cook the steaks the entire time at high heat or you will risk overcooking. For medium well steak, the internal temperature should be between 150-155°.

Finishing the steak

Check the internal temperature of your steak. If it reaches a temperature of 150-155° it’s time to remove it from the grill. Be patient, uncover the steak and allow it to rest for 5 – 6 minutes before cutting. Serve with A1 steak sauce or your other favorite sauce. The best way to grill a steak is no simple task.
