As a type 1 diabetic, I’m always looking for low carb snacks to conserve my insulin and aim for weight loss. This spinach artichoke dip is very low carb and uses light mayo, fat free cream cheese, and Greek yogurt.
Instead of using tortilla chips or pita crackers for dipping we opted for using flat out tortillas cutting them in triangles and baking them. A whole tortilla contains about 19 carbs and that is really low for such a big serving compared to the other options available.
We finish this tasty appetizer with a nice heaping of Parmesan and mozzarella cheese. Wait until the cheese becomes a golden color to remove from the oven.
Easy spinach artichoke dip with flatbread chips
- Preheat oven to 375°F.
- Drain artichokes
- In a food processor, chop artichoke hearts, garlic and onion. Not to fine.
- Combine all the other ingredients in a large bowl and mix together.
- Place mixture in a casserole dish, level with a spoon and bake at 375° for 20-25 minutes or until until cheese is golden brown.
- Cut Flatouts into diagonal chips and cook on a baking sheet for 8 minutes or until lightly brown at 375°F.
