My task was to create a healthy oatmeal pancake recipe that was simple to make yet indulgent to taste. I love combining foods like a mad scientist. Particularly those that spark a memory, an event or a time of season. As of this writing, it is mid-August and fall will be here soon. I’ve been thinking about pumpkin pie, apple pie and all the other amazing Thanksgiving foods that his time of year brings. Why make a healthy oatmeal pancake with yogurt?
I think the term super food gets thrown around far too often. With that being said, yogurt is a super food in the truest sense. Plain Greek yogurt is usually double the protein, has half the carbohydrates over traditional brands. Greek yogurt also contains probiotic cultures, provides an excellent source of calcium, zinc, potassium, as well as, vitamins B6 and B12. I consider myself a bit of a pancake expert as I have made massive amounts of pancakes in my short time here on earth. I have found the secret to fluffy golden pancake is all in the timing. If you flip too soon, the pancake will tear or crumble and will not have that desirable rich, golden color. Cook it too long and you will be eating something that resembles a Frisbee.
The secret to a perfect pancake
So what is the secret you ask? The secret is in the bubbles. The bubbles are like a crystal ball. If you read the bubbles correctly, you’ll know exactly when it’s time to flip and you will become a pancake all pro like me.
It’s also very important to have the heat on the stove set correctly. To be specific, if you’re not using a griddle, make sure you coat a not stick skillet with olive oil spray and set the burner right around medium heat. You’ll want to let the pan heat up completely before you start pouring any batter.
Watch those bubbles
Once the pan is heated, pour out the desired amount of batter into the pan. Be sure not to go overboard with the amount or it will become very hard to manage. I have found that a 1/4 cup of batter is ideal. With a reasonable amount of batter in the pan, watch the pan very closely. You will start to see bubbles forming in the batter as it cooks. Once the bubbles have populated throughout the entire pancake, it is time to flip.

Watch the color of the first few attempts and adjust accordingly. If the first few pancakes are too dark, reduce the heat slightly and wait and then try again. Eventually, you’ll get the correct temperature and these healthy oatmeal pancakes will brighten your day as well as all the other lives they touch.

Healthy oatmeal pancake recipe no flour
- 1/2 cup apple sauce
- 1/4 cup egg beaters
- 2 tsp Baking powder
- 1/2 cup protein powder
- 3/4 cup oatmeal
- 1/2 cup greek yogurt
- 1/8 cup water
- 1/2 cup Mrs. Butter-worth Sugar Free maple syrup
- 1 tsp cinnamon
- In a large bowl combine all ingredients minus the sugar free maple syrup. Stir and mix all ingredients. The texture should be somewhat clumpy and batter should not be thin. If so, add more oatmeal. Spray non stick skillet with olive oil and place a a burner slightly above medium heat. Wait for pan to get hot before adding in the batter. Pour desired amount of batter and wait for bubbles to populate throughout the pancake. Flip the pancake and cook until the surface is golden brown. Stack desired amount of pancakes. Add sugar free maple syrup or cover with your favorite fruit topping.
