One of our local restaurants has a delicious pub-style Irish nachos recipe. We decided to try our hand at them ourselves for St. Patrick’s Day.

What are Irish Nachos?

You don’t have to be Irish and it doesn’t have to be St. Patricks Day to enjoy these wonder nachos. Truth be told, Irish nachos are not really nachos at all. Technically they’re kind of like if a potato chip married a potato skin.

It doesn’t matter, their classic bar and grill food only this Irish nachos recipe is homemade and cooking them is so much fun.

You’ll be stuffing your face and scooping in as much melty cheese and bacon that you can stand. Best of all, it won’t cost you a small fortune to purchase the ingredients.

The previous occasions when I had Irish nachos, they were deep fried. There is no way to make this nacho dish healthy but baking these Irish nachos will help.

The key to making this nacho recipe work is cooking the potatoes to a crispy consistency.  By coating these with oil and spices, baking them until they are golden brown, a crispy bed of potatoes will support the rest of the fresh gooey ingredients.

The homemade ingredients for Irish nachos are surprisingly basic but are right off the bar food menu. We covered ours with Velveeta cheese, cheddar, bacon, green onion, pork sausage, sour cream, and chives.

You can also add shredded pull pork, ground beef or whatever meat you like. Did I mention the Guinness beer? Now we couldn’t call them Irish without the addition of Guinness!
