My husband and I have a fabulous healthy, low carb, banana blueberry muffin recipe that we would like to share. They are flourless muffins. They taste amazing! Even the pickiest eaters in your family should enjoy them. Just don’t tell them they’re healthy. We made these muffins for the family on Saturday night and by Sunday afternoon they were all gone. Indulging in these muffins is a way to give in to the cravings without ruining your diet. They were sweet, soft, moist and the blueberries melted in your mouth. They were awesome for a quick breakfast and high in protein for an energy boost. They also make a great afternoon snack.

I personally love the taste of oatmeal and I like to eliminate flour and break whenever possible. These muffins are made with a lot of oats so they are an excellent fiber source. The result of the high fiber and protein is a feeling of being full.

Protein powder is a great substitute for flour and a great way to inject some additional protein into your diet. I used Six Star Pro Nutrition Elite Series 100% Whey Isolate Protein Powder for this recipe. 1/2 a cup equates to 30 grams of protein. I used the vanilla flavor but you could experiment with other flavors.
