Method

I. For preparing coconut ice cream-

Step 1- Toast the unsweetened shredded coconut in a pan. After you toast them nicely, please place them in a bowl to cool down.

Step 2- To prepare the ice cream base, add coconut milk, coconut cream, sugar, maple syrup, vanilla, and salt in a blender. Blend the mixture into a fluffy texture.

Step 3- Churn the mixture for about 15-20 minutes in an ice cream maker. Add toasted coconut in the mix 5-7 minutes before the churning process is over.

Step 4- Take a container and place the ice cream in it to freeze.

II. For preparing cookies-

Step 1- Take a bowl, add flour, baking soda, baking powder, and salt. Mix it.

Step 2- Add butter, coconut oil, brown sugar, and granulated sugar to the mixer. Mix it. Slowly add coconut cream till it becomes fluffy. Add applesauce and vanilla, and fold it through the mixture.

Step 3- Add dry ingredients into wet ingredients, and combine them to form a soft dough. Add chocolate chips to the dough.

Step 4- Preheat the oven at 350 F., Take a baking tray, cover it with parchment paper and place dough balls on it.

Step 5- Bake the cookies for about 12-14 minutes till they are golden brown. When the cookies are down, let them cool down.

III. Assemble the ice cream sandwich-

Step 1- Take two cookies and place a scoop of ice cream in between them. Repeat the process to make more than one ice cream sandwich.

Step 2- If you want, you can use any toppings such as chocolate chips, crushed pistachios, or crushed graham crackers, or shredded coconut to cover the sides of the ice cream sandwich.

Step 3- Keep the ice cream sandwich in the freezer for about 20-30 minutes until they are firm.
