Baked spaghetti squash boats

Instructions
  1. Preheat oven to 400ºF.
  2. Cut spaghetti squash in half lengthwise
  3. Scoop the seeds out of both halves
  4. Bake about 1/2 hour or until the squash is tender
  5. Let cool for 10 to 15 minutes
  6. Scoop out the contents with a spoon into a large bowl
  7. Place a large skillet on medium heat with some olive oil spray.
  8. Add zucchini, summer squash, red onion, peppers and garlic to the pan.
  9. Add 3/4 jar of pasta sauce and cover with a lid
  10. Brown ground turkey with salt and pepper in a separate pan
  11. Strain the excess fat
  12. Place spaghetti squash shells on a baking sheet and fill with zucchini, squash mixture
  13. Top with ground meat, more sauce and cheese
  14. Return to the oven for 10 minutes
