Place skillet and olive oil on medium high heat.
Half chicken breast.
Place coconut flakes, baking powder and lime zest in bowl.
Beat eggs in bowl.
Gently wash chicken.
Sprinkle salt and garlic powder on both sides of chicken.
Coat chicken on both sides in coconut flake mixture.
Coat chicken in egg mix and return to coconut mix.
Place chicken in skillet.
Cook until chicken is golden and internal temperature is 170 degrees.
