  1. Preheat oven to 350º F.
  2. Place 12 mini paper liners in a 24-cup mini muffin tin. Combine crust ingredients in a small bowl and combine until crumbly.
  3. Spoon about 1 teaspoon into each muffin cup. Lightly press down in the bottom of the liner using the back of a spoon.
  4. Bake for 5 minutes and then set aside to cool – leave oven on.
  5. Meanwhile, place the 1 Tbsp. Stevia, cornstarch, vanilla and cream cheese in a medium bowl. Beat with a mixer for 3 minutes, or until thoroughly combined.
  6. Add egg and beat well for 1 minute.
  7. Add Greek yogurt and beat another minute.
  8. Scoop 1 Tbsp. of filling into each muffin cup, covering the crust. Place 1 piece of strawberry on top, in the middle of every mini cheesecake.
  9. Bake at 350º for 12 minutes or until set. Cool completely on a wire rack and chill for at least 2 hours.
