  1. Combine olive oil, garlic, rosemary, thyme, cilantro and mint into a food processor and pulse to blend.
  2. Rub the mixture on both sides of each lamb chop.
  3. Place lamb chops in a covered tray.
  4. Let the lamb chops marinade for 24 hours.
  5. Pre-heat grill or skillet on high heat.
  6. Cook each side for 4 minutes for a medium-rare.
  7. Increase grill time for desired doneness.
  8. Let the meat rest for 5 minutes before serving.
