Ingredients

Marinade

  • .5 cup extra virgin olive oil
  • 1 cup Lime juice
  • 1 tbsp basil
  • 1 tsp garlic
  • 1 dash Salt
  • 1 dash Pepper

Main Dish

  • 3 chicken breasts
  • 3 roma tomatoes
  • 1 cup spinach
  • 2 cup Mozzarella cheese
  • 1 tbsp basil
  • .25 cup onion
  • 1 tsp garlic
  • .5 cup olive oil
  • 1 dash Salt
  • 1 dash Pepper
  • 3 tooth picks

Instructions

Marinade instructions

  1. Preheat the oven to 350 degrees F
  2. Combine all ingredients in a bowl and whisk
  3. Place chicken and marinade in a large freezer bag and place in the refrigerator for at least 30 minutes.

Main course instructions

  1. Coat a casserole dish with olive oil
  2. In a food processor lightly blend 2 roma tomatoes, onion and basil. Should be chunky
  3. Cut the chicken breasts horizontally to create a pocket for the filling. Be careful not to cut all the way through
  4. Brush both sides of the chicken breasts with olive oil and salt and pepper.
  5. Fill each chicken breast with spinach, tomato slices, and mozzarella cheese, like a pita sandwich.
  6. Pierce chicken with a toothpick to hold together.
  7. Place in casserole dish and bake 50-55 minutes or until the internal temperature reaches 165 degrees F
